Black Bean Brownies

Black Bean BrownieThis recipe comes from Christina Barr.

Another favourite for the family!

  • 1 can (15 oz) organic black beans
  • 3 eggs
  • 1/3 cup softened coconut oil
  • 2 tbsp “Back to the Garden” chia seed powder
  • 1/4 cup cocoa powder
  • 2 tsp vanilla extract
  • 1/2 cup sucanant
  • 1/2 cup semi sweet dark chocolate chips

Preheat oven to 350 and grease an 8” pan with coconut oil.
Put black beans, eggs, coconut oil, chia seed powder, vanilla, and sucanant in to the food
processor. Blend until smooth.
Mix in the chocolate chips by hand or add to the food processor and pulse to mix or turn on to
chop up in the brownies. (whichever you prefer)
Pour mixture into your greased pan. Bake brownies for 30-35 minutes.
Top with sunflower seed, coconut or chocolate chips if you desire. Allow to cool before cutting.
