Sprouted Quinoa Protein Bars

This recipe comes from Christina Barr.

A lot of people have been asking for this amazing recipe. Even kids can dig into this energy-boosting snack!

• 1/3 cup cooked Back 2 the Garden sprouted quinoa
• 2/3 cup water
• 16 whole pitted dates
• 1/2 cup raw almonds with skin
• 1/3 cup peanut butter (or almond butter)
• 1/4 cup dark chocolate chips
• 1 tbsp honey
•1 tbsp Back 2 the Garden Chia seed powder

In food processor, add dates and pulse until they form a ball.
Remove dates and place in a small mixing bowl.
Add almonds to the food processor and finely mince. Be careful not to turn almonds into mill.
Add dates, peanut butter, chia seed powder and cold quinoa to food processor and pulse until ingredients are well combined.
Spread in a 9 x 9 pan and cut into 2” x 1” bars.
In small sauce pan, add chocolate chips and honey…melt. Evenly spread chocolate over the top of bars.
Place in fridge until chocolate hardens. Bars can be stored in an air tight container for several days.
