- Olive oil
- 2 med. Yellow onions
- 4 stalks celery
- 2 carrots
- 1 leek
- 1 can diced tomatoes with herbs and spices
- Sprouted lentils, quinoa, and rice
- 1 carton beef, vegetable, or chicken broth
- 1lb. Ground beef, meatballs, or diced chicken
Heat 1 tbsp. Olive oil. Add 2 diced onion, diced celery, diced carrot, diced leek to hot oil, or any vegetable you like.
Reduce heat to medium. Stir occasionally until soft. Add 2 tbsp. parsley, stir again.
Add 1 can diced tomatoes with herbs and spices, 1 carton of beef /vegetable or chicken broth, and 1/4c. each of sprouted quinoa, lentil, and rice.
Cook until rice, and lentils are tender.
Quick Tip: Brown 4 lbs. of ground beef at once. Separate into 4 food grade plastic bags, freeze.
Add to soups, tacos, lasagna or chili, when needed. Great for lunches, appetizers, and/or energy boosters.
