Chicken and Vegetables with Citrus Ginger Sauce on Sprouted Rice

  • 1 cup of rice
  • 2 cups of broth
  • 1 cup broccoli, chopped
  • 1 cup orange pepper, chopped
  • 1 cup red pepper, chopped
  • 1-2 cups chicken, cut or diced (optional, use a protein substitute)
  • 1/2 cup orange juice
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 garlic clove, pressed
  • ginger, pressed
  • 1 tbsp honey
  • 1 orange peel, grated
  • thicken the sauce with sprouted chia seed and flaxseed gel (optional)
